Ingredients

For the Miso Ramen:

  • 4 cups chicken or vegetable broth
  • 3 tablespoons white or red miso paste
  • 8 ounces ramen noodles or wheat noodles
  • 8 slices of chashu pork (thinly sliced braised or roasted pork belly)
  • 2 soft-boiled eggs, halved
  • 1 cup corn kernels (cooked)
  • 1 cup sliced mushrooms (shiitake or button)
  • 1 cup chopped scallions (green onions)
  • Nori seaweed sheets (cut into thin strips)
  • Sesame seeds (for sprinkling)
  • 2 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon mirin (Japanese sweet rice wine)
  • 1 teaspoon sugar (optional, for slight sweetness)

Directions

  1. In a large pot, bring the chicken or vegetable broth to a simmer over medium heat.
  2. In a small bowl, whisk together the miso paste and a ladleful of the hot broth until smooth.
  3. Add the miso mixture to the pot and stir well to combine.
  4. Reduce the heat to low and let the broth gently simmer while you prepare the other components.
  5. In a separate pot, cook the ramen or wheat noodles according to the package instructions.
  6. Drain the noodles and rinse them under cold water to remove excess starch. Set aside.
  7. If using pre-cooked chashu pork, simply heat it up in a pan or microwave until warmed through.
  8. If preparing from scratch, sear the pork belly slices in a hot pan until browned on both sides. Then, simmer them in a mixture of soy sauce, mirin, sugar, and water for about 1-2 hours until tender. Slice before serving.
  9. Cook the corn kernels, either by boiling or sautéing them until tender.
  10. Sauté the sliced mushrooms in a bit of oil until they are softened and cooked.
  11. Chop the scallions (green onions) and cut the nori seaweed sheets into thin strips.
  12. Divide the cooked noodles into serving bowls.
  13. Ladle the hot miso broth over the noodles, making sure to distribute it evenly.
  14. Arrange the chashu pork slices, soft-boiled egg halves, cooked corn, sautéed mushrooms, chopped scallions, and nori strips on top of the noodles.
  15. Drizzle with a small amount of sesame oil for extra flavor.
  16. Sprinkle sesame seeds on top for garnish.
  17. Serve the Miso Ramen immediately while it's still hot
  18. Encourage everyone to mix the ingredients together in their bowls to combine flavors.
  19. Savor the rich and comforting flavors of the miso broth, tender noodles, and delectable toppings.
